Hot Dry Noodles (Re Gan Mian)
A classic breakfast dish, hot and dry noodles deliver exciting flavours, pleasant
textures and are very easy to make!

Recipe
- 2 portions of Alkaline Noodles (see note 1 for substitutes)
- 2 tablespoons of Sesame Paste (see note 2)
- 1 tablespoon of Sesame Past first with 5 minutes break
- 1 tablespoon of Sesame Past first with another 5 minutes break
- ½ tablespoon of Sesame Oil
- 2 cloves of Garlic (minced)
- 2 tablespoons of Light Soy Sauce
- 1 teaspoon of Dark Soy Sauce
- add Salt
- add White Pepper (ground)
- add Homemade Chili Oil (optional)
- 3 Pickled Long Beans (chopped, See note)
- 3 Preserved Daikon Radish (chopped, See note)
- add Scallions (finely chopped)
Substitutions
Sesame Oil
1 1/2 teaspoon sesame seeds sautéed in 1/2 teaspoon vegetable oil
Garlic
1/8 teaspoon garlic powder or 3/4 teaspoon minced garlic or 1/2 teaspoon garlic salt

- Heat up a large pot of water. While
waiting for the water to boil, add sesame paste,
sesame oil and 1 tbsp of water to a bowl. Stir to thin the paste until it reaches a smooth
and runny consistency.
